Mango Ginger Tofu Recipe

Hi guys! I wanted to share a quite tasty tofu recipe that I created earlier this week. As I have only been eating tofu for about two months now, you can imagine that I am still doing a lot of experimenting with cooking it. Most of the time I am just grabbing 3-4 random spices and sauces and blending them. Sometimes they turn out delicious, sometimes, well... they don't. But I have done it! I found a blend that is so good I had it 3 nights in a row. Here it is...

Mango Ginger Tofu:

You will need:
- 1 tbsp of agave nectar 
- 1 tsp of apple cider vinegar (I know what you're thinking, just trust me)
- 1 tbsp of flax seed
- 3 tbsp on your mango ginger sauce. 
- Tofu (duh)

For the Mango Ginger sauce - I bought mine at Trader Joe's. From my understanding, this is a pretty common blend and can be found at most grocery stores. This is what mine looks like: 



Preparing the Tofu: 
1. Place 4 paper towels on a plate. 
2. Lay your tofu on top of the paper towels. 
3. Put another 2-4 paper towels on top of the tofu. 
4. Cover with a clean kitchen towel. 
5. Place another plate, or other weight, on top and let sit for 15 minutes. 

Preparing the Mango Ginger Marinade:
1. Mix the above ingredients in a small bowl
2. Let it sit in your fridge 15-30 minutes. The longer it sits, the better it blends. 



Cooking Directions:
1. Preheat your oven to 450. 
2. While the oven is preheating, slice your tofu however desired. I sliced mine into small, thin cubes. 
3. Place the tofu on a foil covered baking sheet.


4. Cover the exposed sides of tofu with the marinade. 
5. Once the oven is preheated, go ahead and insert the tofu and bake for 20 minutes.


6. After 20 minutes, flip the tofu and then coat the tofu in marinade. 
7. Let bake another 10 minutes. 
8. Take out and let sit for 5 minutes.
9. ENJOY!
